The Story

"Grandma's" means the kind of home recipe that ignores trends and gets handed down from one generation to the next.
We use Taiwanese lemons: the zest grated into the batter, the juice simmered into syrup. The cake is brushed with syrup while still hot from the oven, so the sharpness soaks into every layer; once cool, it's covered in lemon icing that sets into a thin white shell that crackles.
After a day the syrup soaks in further, making it even moister than when fresh. Best sliced from the fridge, then brought back to room temperature.
