The Story
關於這款甜點
The scorched top of a Basque cheesecake is often mistaken for overbaking. In fact, that caramelisation is its soul: the high heat sets off a rapid Maillard reaction between the sugar and cheese on the surface, sealing moisture into the centre.
We use French cream cheese and Madagascan vanilla pods, bake at 230°C for 25 minutes, then blast-freeze it straight away, keeping it exactly as it was fresh from the oven, centre still wobbling, for you.
We suggest moving it to the fridge the night before. If you can't wait, slice it after an hour of thawing: that's the ice-cream version of Basque.
