The Story

When the French say gâteau au chocolat, they don't mean a cream-covered birthday cake, but a plain chocolate cake with a crackled top.
There's so little flour in the recipe that it barely counts; what holds the cake up is whipped meringue. The centre sinks a little after baking, which is the proof of how moist and dense it is. We use 70% dark chocolate and French cultured butter, and simply dust the top with icing sugar.
Straight from the fridge it's firm and intense; give it ten minutes at room temperature and the cocoa really opens up.
