The Story

The canelé asks more patience than any other dessert: the batter rests for 48 hours, the copper moulds are brushed with beeswax, and each batch bakes for a full hour and a half.
A good canelé has two textures: a shell as crisp as caramel and a centre as soft as custard. The line between them comes down to judging the oven's temperature and timing.
Canelés are best on the day they're baked, so we only ship same-day. Enjoy within two days at room temperature.
