A Breton shortbread recipe is so simple there's nowhere to hide: four ingredients, and if any one of them falls short, you can taste it.
So we use salted cultured butter, caster sugar and soft flour, and bake until golden at the edges with a touch of softness left in the centre.
Lovely with coffee or tea, and it keeps for three weeks at room temperature.
