Why Do Desserts Ship at Different Temperatures?
Why can't a tin of cookies and a cream roll share the same box?
Different desserts need different temperatures…
Ambient: cookies, shortbread, canelés. Chilling them only makes them take on moisture and go soft.
Chilled, 0–7°C: cream cakes, tiramisu. Let the temperature rise and the cream collapses.
Frozen, -18°C: Basque cheesecake, nama chocolate, croissant dough. Only freezing can lock them in the state they were in when freshly made.
So we split a single order into separate boxes, each delivered to your door at the right temperature.
