How to Thaw a Frozen Cake So It Tastes Its Best
Leaving it out at room temperature is the most common mistake.
What a frozen cake fears most is too sharp a change in temperature…
Thaw slowly in the fridge: move it from the freezer to the fridge the night before. After 6–8 hours, it's as close as it gets to fresh from the oven.
Half-thawed is delicious too: slice a Basque cheesecake after 2 hours in the fridge and it eats like ice cream.
Whatever you do, don't: leave it out at room temperature or put it in the microwave. The surface weeps while the centre stays frozen.
